Fruit vinegars are produced in two ways: infusing fresh or frozen fruit in wine vinegar (the most common commercial method, where the fruity character comes from the infusion rather than fermentation) or from directly fermenting fruit juice through alcoholic and then acetic fermentation (less common, more complex). The infused versions vary widely in quality: whole fruit infusion in good white wine vinegar produces a vibrant, genuinely fruity result; industrial versions often use fruit flavorings. Raspberry vinegar is the most widely used fruit vinegar — in the warm raspberry vinaigrette (raspberry vinegar reduced with shallots, then emulsified with oil) that was standard in American restaurants in the 1980s and that remains genuinely delicious for duck and poultry salads. Fruit vinegars work particularly well in gastrique sauces (vinegar-sugar reductions) for duck, pork, and game birds. The sweetness and fruity acidity balance rich, fatty proteins.
